Yesterday I did a trial of Ayam Penyet for my husband and my son and they just loves it. Ayam Penyet is a Malay word which and can be difficult for both of them to pronounce it so obviously I thought them the simple English translation of Smashed Chicken:)
Ingredients:
1 whole chicken, cut into smaller pieces
2 cm galangal, crushed
2 stalks lemon grass, crushed
4 bay leaves
dash of white pepper
1 cup water
200 ml coconut milk
salt and sugar to taste
Blended/Pounded Ingredients:
1 big onion
3 cloves garlic
2 cm ginger
1 whole chicken, cut into smaller pieces
2 cm galangal, crushed

4 bay leaves
dash of white pepper
1 cup water
200 ml coconut milk
salt and sugar to taste
Blended/Pounded Ingredients:
1 big onion
3 cloves garlic
2 cm ginger
1 tbsp fennel seeds, corainder seeds, cumin seeds, fried in a pan without oil until fragrant.
Place all ingredients in a pot and cook them slowly until chicken is cooked. Remove chicken and leave gravy to cool down completely.
Frying Ingredients:
rice flour
rice flour
chicken gravy above
salt to taste
oil for deep frying
salt to taste
oil for deep frying
Mix all the ingredients in a bowl.Heat enough oil for frying. Once the oil is hot, dip the chicken into the mixed flour. Deep fry until golden in colour.
Crispy (Fried Batter) Ingredients:
chicken gravy
rice flour
1 egg
salt to taste
oil for deep frying as above
chicken gravy
rice flour
1 egg
salt to taste
oil for deep frying as above
Mix all ingredients in a bowl and season to taste. Add tablespoons of batter to oil and deep fry until crispy. These are used to sprinkle over chicken when serving.
I also used the chicken gravy to cook the rice and it taste fantastic.
