Singaporean Style of Ayam Penyet



Yesterday I did a trial of Ayam Penyet for my husband and my son and they just loves it. Ayam Penyet is a Malay word which and can be difficult for both of them to pronounce it so obviously I thought them the simple English translation of Smashed Chicken:)

Ingredients:
1 whole chicken, cut into smaller pieces
2 cm galangal, crushed
2 stalks lemon grass, crushed
4 bay leaves
dash of white pepper
1 cup water
200 ml coconut milk
salt and sugar to taste

Blended/Pounded Ingredients:
1 big onion
3 cloves garlic
2 cm ginger
1 tbsp fennel seeds, corainder seeds, cumin seeds, fried in a pan without oil until fragrant.

Place all ingredients in a pot and cook them slowly until chicken is cooked.  Remove chicken and leave gravy to cool down completely.

Frying Ingredients:
rice flour 
chicken gravy above
salt to taste
oil for deep frying

Mix all the ingredients in a bowl.Heat enough oil for frying. Once the oil is hot, dip the chicken into the mixed flour.  Deep fry until golden in colour.  

Crispy (Fried Batter) Ingredients:
chicken gravy
rice flour
1 egg
salt to taste
oil for deep frying as above

Mix all ingredients in a bowl and season to taste.  Add tablespoons of batter to oil and deep fry until crispy. These are used to sprinkle over chicken when serving.

I also used the chicken gravy to cook the rice and it taste fantastic.

Estonia Tallinn 2013

Early this summer we took a short trip to Estonia for the weekend with just our little boy with us.
The habour right in the city surrounded by restaurants, bars, shopping mall.


We passed by a restaurant which is lifted up by crane. The safety seems hassle  to me as all the customers are tightly strapped to their seat belt and locked tightly at the back of their seat. Which mean no standing up after that. As you can see kitchen are in the center of the surrounded table. Chefs cooks and serves customers when you up in the air.
My husband was right, "what happen if you desperately need to go toilet during the dinner?" Cool " dinner on air" but not cool "if you toilet nerdy"


The old town of Tallinn. Its beautiful, really beautiful. So many restaurants and outdoor serving. But as usual, old town, tourists places are always expected to have high prices on the menu. 1/2 fried chicken is 15 euros and have to pay extra if you want fries or rice on the side. Thats damn ridiculous. 

Their outdoor florist shop which caught my eyes. Its more than 10 shops in the same row which sells beautiful colourful fresh flowers.
As usual Gabriel always wants ice cream after a long walk. 
It was not so warm day. Cloudy, windy and few mins of sun every now and then. 

Passed by an old building by the old town where a lady dresses in traditional clothes shooting an arrow.
