Singaporean local favourite Roti Paratha

Roti Paratha is one of my family favourite dish even for my Swedish husband. I normally do the paratha myself as buying the frozen ready made paratha is not so filling and they are normally very small and thin. Furthermore it is not that easy to find in nearby supermarket except it is sold in the Asian supermarket. Compared to living in Sweden, Stockholm before, there are several Asian store in the center of the city and some in Södermalm. Now that we have moved to London, there are plenty of Asian store in every area. Still at time I prefer doing my own paratha as my son loves the egg paratha while my husband loves the cheese paratha. 

Here are paratha ingredients:

1 1/2 cups of plain flour 
(in England choose the hard type of plain flour as I did once with normal plain flour and it is just too soft to stretch it)
1/2 cup ghee or butter is fine if you prefer.
 estimated 1/2 cup Evaporated Milk
Salt to taste

Method

Put the flour and salt in a big bowl
Then you can add in add 1/4 cups of ghee or butter into a hole made in the dough.
Mix well and gradually add enough milk to bind the dough.
Next knead the dough on a greased counter top for 5-8 minutes.
Place it back in the bowl and let it rest for at least 2 hours. This helps the dough to stretch well.

Below is a youtube video link of how she strech the paratha. This is a professional way but if you cannot do that kind of stretching you can also use a roller and stretch it slowly by your hands.
